How do I go back to the default theme?

To change your theme back to the default, just follow these steps:

Tap the paintbrush icon to open the Themes screen
At the top, scroll horizontally among the filter options (Create, All, Free, New, Seasonal, Most popular, and Recent).
Tap "Recent"
Look for the default theme among the themes you’ve used before and tap to apply it
